Quick and Easy Paleo Granola

Hello my Queens!!

This is going to be a short and sweet post to let you in on this yummy and healthy goodness that’s versatile as a snack for a midday pick me up, yogurt topping or a full on breakfast. This quick and easy granola contains ingredients, like collagen powder, that will nourish your body, help your skin glow, hair and nails grow and keep you feeling satiated for hours. If you stick around here long enough, you will realize I love putting collagen powder in EVERYTHING (like my Perfect Grain-Free Waffles). I purchase this huge container of Wholesome Wellness Multi Collagen Protein Powder. It has no offending odor, taste and it blends like a dream into my bullet proof coffee.

I throw all the ingredients into my Vitamix fitted with the dry mix container or the food processor, blend for about a minute and it’s ready to pop into the oven.  Seriously, this granola will be in your belly in no time. I can eat this stuff plain and straight out of the oven. Sometimes I throw in some raisins for a little added sweetness or add unsweetened almond milk to eat as a cereal. But my favorite way to enjoy this granola is as an alternative to oatmeal. I start by placing the granola in a microwave-safe bowl, add a splash of unsweetened almond milk and ghee then pop it the microwave for 30 seconds to one minute. Stir and top with fresh fruit. So good! You can even add additional honey or maple syrup to sweeten.

So without further ado, let’s get started!

NOTE: you will be cooling your granola on the cookie sheet and it will continue to crisp so don’t overcook. Store in an air tight container for up to one week.
