The Perfect Grain-Free Waffle

Okay Queens! This is the perfect waffle recipe you have been searching for. Don’t settle for those pieces of cardboard that Eleven from Stranger Things seems to love so much.

Nourish your body (AKA your temple) with these aboslutely delicious whole food, grain free, sugar free and dairy free crispy waffles that can also be made vegan by omitting the collagen and substituting the eggs with flax or chia eggs. I do this by combining 2 tablespoons of ground flax or chia with 1/4 cup + 2 tablespoons of warm water. Then let them sit for about 5 minutes to thicken up.

These waffles are Paleo friendly and have Whole 30 compliant ingredients BUT waffles are on the NO-NO list during Whole 30. 

Since I’m a grown ass woman, I make my own rules when it comes to Whole 30. If the ingredients are compliant, then I eat it. Periodt!

I love adding collagen powder to this recipe for an extra boost of protein and collage does wonders for your hair, skin (good-bye wrinkles, hello glow) and joints.

Important cooking tips:

-Weigh your ingredients. While I provided the cup measurements for the almond and tapioca powder, weighing the ingredients will prevent 99% of the problems you might experience when it comes to grain free cooking.

-Make sure your baking powder is grain free or you can make your own easily by combining 1 part baking soda to 2 parts cream of tartar (example: 1 tsp. baking soda and 2 tsp. cream of tartar). I always make my own so that I know exactly what’s in it.

-The applesauce should be unsweetened. Again, this is where homemade is best. I usually load up on 50 pounds of apples when in season, make a huge batch of applesauce and can it to use throughout the year.

I used a belgian waffle maker but these could easily be made in a regular waffle iron. You’ll just have more waffles to eat. Which isn’t a bad thing at all.

I know you guys will love this receipe as much as I do. It’s so filling. Really, most days I just eat half of the waffle for breakfast and the other have for lunch. I top my waffles with almond butter and fruit to provide the perfect amount of sweetness. Even some of my kiddos like these waffles without maple syrup.
