Crispy, Golden, Grain-Free Waffles You’ll Want Every Morning (Yes, They’re THAT Good!)

Okay Queens—this is the waffle recipe you’ve been dreaming about. Forget those cardboardy freezer waffles that Eleven from Stranger Things loves so much (we love her, but we’re leveling up, okay?). It’s time to nourish that temple of yours with something crispy, fluffy, and full of whole-food magic.

What Makes These Waffles So Magical?

These waffles are:

  • Grain-free
  • Dairy-free
  • Sugar-free
  • Collagen-boosted (hello glow!)
  • Vegan-optional

Want to keep it plant-based? No problem! Just:
*Skip the collagen
*Replace the eggs with flax or chia eggs

Here’s how:
Mix 2 tbsp ground flax or chia seeds with 1/4 cup + 2 tbsp warm water, let it sit for 5 minutes to thicken up. Boom—vegan magic.

Whole30...ish?

Technically, these are Whole30 ingredient-compliant. But let’s keep it real—waffles are on the “no” list during Whole30.

To that I say:
I’m a grown-ass woman. I make my own rules.
If the ingredients are clean and my body says yes, then I say YES. Periodt.

Collagen Glow-Up Benefits

I love adding collagen powder (this one is my fave) to this recipe for that extra protein punch.
Bonus: Collagen is your BFF for:

  • Stronger hair and nails

  • Glowy, youthful skin

  • Happy joints and bones

Pro Tips for Waffle Success

Weigh Your Ingredients
Yes, I included cup measurements—but for grain-free baking, your kitchen scale is the MVP. Consistency = delicious waffles every time.

Check Your Baking Powder
Make sure it’s grain-free. Or make your own:
1 part baking soda + 2 parts cream of tartar.
(Example: 1 tsp baking soda + 2 tsp cream of tartar)

Use Unsweetened Applesauce
Homemade is best. I usually stock up on apples in the fall, make a massive batch of applesauce, and can it for the rest of the year. #PrepQueen

I use a Belgian waffle maker (the one I own is very similar to this one), but any waffle iron will do.
If you’re using a regular one, you’ll just get more waffles.
(And let’s be honest—is that really a problem?)

How I Eat Them

These waffles are super filling.
I usually eat half for breakfast, then save the rest for lunch.

My fave toppings:

  • Almond butter

  • Fresh fruit

  • A drizzle of maple syrup (if I’m feeling extra)

Even some of my kids love them without syrup. I know. Miracles happen.

So go ahead, make yourself a batch and let me know what you think. Snap a pic, tag me, and show the world your waffle glow-up.

P.S. – These waffles freeze well so make a huge batch when you have time and enjoy later!

Products I Use & Recommend

Anthony’s Organice Tapioca Flour  – Love that it comes in a big bag and well it blends into liquids when used as a thickner.

Revive Multi Collagen Protein Powder – A great collagen powder that I have been using for years. It blends beautifully into your morning coffee, with no clumps or weird taste.

Nutiva Organic Steam Refined Coconut Oil – We use coconut oil in the kitchen and from head to toe, so this gallon bucket is a must.

OXO Good Grips 11 Pound Food Scale With Pull-Out Display – I have had this scale for over 14 years. It has endured 5 kids, 4 moves, plus countless drops and it’s still going strong. The display pulls out which is more convenient than one may think.
